Here is the mechanism: your ears can only evaluate frequency balance accurately against a reference that is flat, meaning a monitoring source that does not emphasize or roll off any frequency range. Consumer headphones almost never do this. They boost bass to sound pleasing on a commute. They hype the high end to make vocals sound airy. Every decision you make in a mix is filtered through those biases, and you correct for problems that are created by the headphones, not by the mix.
