You hear it as hum or buzz.

A balanced cable carries your audio on three conductors: a signal wire, an inverted copy of the signal wire, and a ground. When the signal reaches the input of a balanced device (like a proper audio interface), the device flips the inverted copy back to normal and adds it to the original. Any interference that was picked up along the way was picked up equally on both wires. When the inverted copy is flipped and added, the interference cancels out. This is called common-mode rejection, and it is why professional studios use XLR cables for everything.
